If you are a tomato nut like me…”extra tomato please!”…you will LOVE this recipe. Great to use up some ripe ones and experiment with different colour tomatoes…for drama.
BALSAMIC BAKED TOMATOES
1 cup (250 mL) fresh bread crumbs
Combine bread crumbs, oil, garlic, thyme, salt and pepper; set aside. Arrange tomatoes in a single layer in a greased shallow baking dish. Drizzle vinegar over tomatoes. Sprinkle with bread crumb mixture. Bake at 350ºF (180ºC) for 30 – 35 minutes or until tomatoes are tender and topping is crisp and lightly browned. Serves 8 – 10.
